After recently getting a MBP 14" 2023 512GB I've read that the read/write speed is nearly twice as fast with the 1tb drive, question is would you actually notice this difference at all, not doing anything intensive so no video or photo editing, only light work.

I was wondering the same thing, apple replaced my 16" M1 512GB with the 16" M2 512GB and sure enough, the NAND is half as fast.. but so far in real world testing, I haven't noticed any difference at all. The only time you'll notice anything is if you end up running out of physical memory and starting to use swap, or if you're writing large files to the hard drive.

Those are my .02 at least.

You won't notice, base on your workload in real world.
