Including "And. And. And. And. And." in a Google doc causes it to crash.

It's case-sensitive. So trying with "and. and. And. and. And." doesn't cause it to crash.
I've only tried in Google Chrome, with documents from three separate Google accounts (personal, G Suite Basic, and work one which might be enterprise). All three experience this same issue.
When filtering the Chrome Dev tools network tab with the text "error", one can see a POST request being made to url starting with https://docs.google.com/document/u/1/jserror, and the payload says it's "Caused by: TypeError: Cannot read properties of null (reading 'C')":

I think it's only after entering that specific string and refreshing the page when the error appears. I'm not seeing the screenshots I added in the original post - it's two separate popups:
1) "Something went wrong. Reload." with blue background toward the top
2) "Unable to load file [newline] Try to load it again or send and error report [Reload button]"
Confirmed in Firefox 99.0.1
Typed "And. And. And. And. And." on a line, hit enter, reloaded page.
Error as pictured.

I found the same issue also happens with "But. But. But. But. But."
