为什么精品咖啡总是酸的

其实这不是个好问题，人们对酸的敏感程度不一样，同一杯咖啡也并非每个人都觉得酸。但是倒没必要否认，人们往往会把精品咖啡和酸挂起钩来。不过，可以说酸其实只是副产物。所谓精品咖啡，追求的是产地之味而不是酸。咖啡豆在烘焙过程中，从生豆开始慢慢升温脱水，所谓的产地之味——花香果味以及其它种种具体或模糊的风味——被催发出来，但是到达某个临界点之后，这些风味却会急剧消散。所以，既然精品咖啡这个概念当中就包括了欣赏产地之味，那么精品咖啡选用的咖啡豆自然也就普遍烘焙到前面所说的那个临界点之前。而恰巧，咖啡豆的酸度在烘焙过程中的变化和产地之味类似，也是被先催发后抑制，那个精品咖啡烘焙的临界点之前，咖啡豆一般都还保持着比较明显的酸质。精品咖啡不是为了追求酸而酸，而是适合供我们欣赏产地之味的咖啡豆恰好是酸的。
