We all have that one recipe we love to make that calls for room temperature eggs. Leaving your eggs out on the counter or at least taking them out of the fridge before you start baking is best practice—but how long on the counter is too long? If you don’t remember how much time has passed and those eggs have been sitting out for a questionable amount of time, are they still safe to use? We reached out to the experts at Eggland's Best to finally get an answer.

Why Do Recipes Call for Room Temperature Eggs?

Have you ever tried to add cold, straight from the fridge eggs to your batter and found yourself with a chunky mess? Adding cold eggs will have less than desirable results.

Room temperature ingredients combine more easily than cold ingredients, and that goes for items like butter or cream cheese as well. And if you've softened your butter for cookies and have it perfectly creamed with the sugar and then add a cold egg, you can end up causing the butter to seize back up giving your dough a curdled effect.

When we say room temperature, we mean somewhere in the realm of 68 to 74 degrees Fahrenheit (about 20 to 23 degrees Celsius). Adding a room temperature egg creates an emulsion that contains air. When baked, the trapped air expands creating lift and height in your baked goods. Slightly warmer temps also help incorporate the yolk with the egg white better.

Can I Leave Eggs Out on the Counter?

We reached out to Eggland’s Best to settle the debate. Dave Holdsworth, the Vice President of Marketing at the company told us, "According to the USDA, eggs should not be left out of the refrigerator for more than two hours; one hour if the outside temperature is 90 °F or above.”

This is food safety 101. The danger zone, between 40 and 140 degrees Fahrenheit, is where bacteria or illness can grow quickly. When dealing with eggs, we’re likely talking about Salmonella, one of the most common foodborne illnesses. The CDC estimates Salmonella causes about 1.35 million infections, 26,500 hospitalizations, and 420 deaths in the United States every year. Symptoms can last up to seven days and start as soon as six hours after eating!

How to Bring Eggs to Room Temperature Quickly & Safely

To avoid having your next batch of royal icing cancel the party, either make sure to set a timer for your eggs before you leave them out. Or, to get eggs up to temperature in a pinch, just place them in a bowl of warm temperature water while you gather the rest of your ingredients. In about 5 to 10 minutes, the chill from the eggs will be gone and they'll be ready to put to use in your dough.

But when in doubt, throw them out! Better safe than sorry!
