菜谱:茄子肉沫

家常少油版本茄子肉沫制作。

长茄子,猪肉沫(最好有肥有瘦,否则太干),青椒,大蒜,姜,红洋葱,耗油,黄豆酱,干黄酱,老抽

  1. 青椒切片,姜切沫,大蒜切沫,洋葱切丝,取适量耗油、黄豆酱,干黄酱加水搅拌均匀调个碗汁
  2. 如果不是猪肉沫,需要猪肉切沫

锅内加入油,油热加入猪肉沫翻炒,加入切好的洋葱,姜沫,部分蒜沫,继续翻炒,加入适量料酒或者白酒,一直翻炒,加入适量老抽上色,翻炒直到把水汽炒干,肉沫开始变得轻盈,盛出备用

锅内加入少量的油,长茄子掰成段放进去,一定要中小火(如果是 6 级,用 level 2 或者 3 即可),盖上锅盖煎三分钟,然后开盖把茄子翻面,再煎三分钟

此时茄子到了一捣就碎的程度,倒入炒好的肉沫,翻炒,加入青椒片,继续翻炒,加入调的碗汁,水不够加水,没过茄子差不多,中小火煮一下,等水分少了以后,加入剩下的蒜末,搅拌均匀,待水分快干时关火。
