Oneplus 8 LineageOS 19.1 Issues with SIM Card and Overall Flashing Recoveries/other ROMs

Hello. I recently flashed LineageOS 19.1 to my phone, which previously have 18.1 It was a clean install, factory reset first, etc.
I now have an issue with the SIM card where it isn't detected at all. Google FI is the provider. I did basically everything I could find to try and fix it and nothing worked.
I tried factory resetting, reflashing, APN, etc. I eventually tried to go back to 18.1 and realized that it was basically impossible. I could not flash TWRP (3.7 is not officially out yet ofc) and old 18.1 recovery did not flash properly (would keep rebooting to bootloader instead of actually loading recovery). In addition, 19.1 recovery did not allow me to flash 18.1.
Does anyone have any solutions to my issues? I'm starting to get desperate as I do need mobile data for daily tasks. Either a way to fix SIM or a way to revert would be absolutely amazing.
I should like to mention that the SIM card worked flawlessly on 18.1.
