More likely it's to save costs and time to get their message across. The fact this annoys you is weird. Quite subjective too. As someone else said, very few will notice. Therefore, a large majority just don't care. I sure as hell don't. That's just wasting time.

If I was designing this video, I'd want to make sure it's showcasing the latest and greatest when talking about the latest and greatest. It'd be like nails on a chalkboard otherwise.

That's visually obvious especially to the average person. The chip is not, therefore, a waste of time. I mean very few of people like you will notice let alone care. That's pretty elitest.
"The average person" easily associate a rocket to something like a Saturn V, but if Nasa would use a Saturn V or an F-1 engine from one in a video about Artemis, that would be a cringe moment. When the topic is the progression of tech, you better get the tech right.
